Handpicked fruit and whole bunch pressed. This Chardonnay went through wild fermentation in old french oak barrels and was left to mature for 18 months. Lees stirring allowed the wine to build complexity, resulting in lifted citrus/ white peach aroma aligned with subtle gun flint.
